Hierophant Meadery: Honey-Based Beverage at Green Bluff

With an emphasis on sustainable agriculture, Hierophant Meadery offers the Inland Northwest with a variety of mead, an alcoholic and honey-based beverage. Its tasting room is located in Green Bluff, where visitors can purchase flights of mead and sit outside by the fire.

Michelle Scandalis and Jeremy Kyncl met at Bastyr University, as botanical science majors. 

“We cared very much about bridging the gap between people who know about plants and people who don’t yet,” Scandalis said. “Botanically-infused mead is really a wonderful marriage of all the things we’re passionate about: plants, pollinators, plant diversity, and sustainable agriculture.”

Coincidentally, Hierophant started the same year as Big Barn Brewing and Twilight Cider Works. 

“We suddenly had this craft beverage vibe,” Scandalis said.

For those not familiar, mead is a honey-based beverage, likely one of, if not the oldest alcoholic beverage in existence. Though you might think it would be sweet, the flavor profile can range all the way to dry, depending on the ingredients and brewing process. Hierophant makes both still and sparkling versions, and a variety of flavors that come from plant infusions—many of the plants locally sourced. They currently make 25 different products. You can taste about 15 of them at any given time at their Green Bluff tasting room. Keep an eye out for seasonal flavors and new varieties popping up in the tasting flights.

Besides mead, Hierophant also makes a switchel, essentially a vinegar-based tea, in a variety of flavors, all of which are non-alcoholic.

At the tasting room, you can pick up mead, sip some switchel, or purchase some plant-based apothecary products. If it’s been a while since you’ve been there, you’ll be happy to know that they’ve expanded the space, which now comfortably holds 80 people. Be sure to bring a picnic basket, say hi to the animals from the rescue sanctuary on the property, and raise a glass.
