Dill & Dijon Potato Salad

Celebrate Independence Day with a classic American favorite - homemade potato salad with a touch of dill! A patriotic and delicious side dish to accompany the festivities! Wishing you a safe and memorable Fourth of July from Edible Inland Northwest.

 

Ingredients

2 pounds of potatoes

1/2 cup mayonnaise

2 tablespoons Dijon mustard

1/4 cup finely chopped fresh dill

1/4 cup finely chopped red onion

2 tablespoons apple cider vinegar

Salt and pepper to taste

 

Instructions

Start by washing the potatoes thoroughly. Ours were fresh from the garden so they needed a little extra scrubbing! If using Yukon gold or red potatoes, you can leave the skins on for added texture and flavor. Cut the potatoes into bite-sized pieces, ensuring they are roughly the same size to cook evenly.

Place the potato pieces in a large pot and fill it with enough water to cover the potatoes. Add a pinch of salt to the water for seasoning. Bring the water to a boil over medium-high heat and cook the potatoes until they are tender but still firm, usually around 10-15 minutes. You can check their doneness by inserting a fork or knife into a potato piece - it should slide in easily.

While the potatoes are cooking, prepare the dressing. In a medium-sized bowl, combine the mayonnaise, Dijon mustard, chopped dill, red onion, and apple cider vinegar. Stir well to ensure all the ingredients are thoroughly mixed.

Once the potatoes are cooked, drain them in a colander and let them cool slightly. You can run them under cold water to speed up the cooling process.

Add the slightly cooled potatoes to the bowl with the dressing. Gently toss the potatoes until they are evenly coated with the dressing. Be careful not to break the potato pieces.

Season the potato salad with salt and pepper to taste. Remember to taste and adjust the seasoning as needed.

Once seasoned, cover the bowl and refrigerate the potato salad for at least an hour to allow the flavors to meld together. This will also help the salad to cool and become more refreshing.

Before serving, give the potato salad a final toss and garnish with dill if desired. Serve chilled and enjoy!
