What launched as a cookie delivery service during the pandemic and successfully expanded to offer wholesale and shipping now has a retail bakery to call their own. Gage Lang and Breaüxdoo Bakery have opened a storefront in Spokane Valley, giving them the opportunity to serve items like ice cream sandwiches with soft serve and biscuits and gravy that would not stand up to delivery–all enjoyed with a healthy side of rock-n-roll.

Since launching Koselig Kitchen in the summer of 2021, chef/owner Renée Bolstad has been serving up her nostalgic eats and frozen treats at farmers markets across the region. Now Koselig (pronounced KOOSH-lee) has set up shop inside the Wonder Building where Bolstad can expand her offerings and serve them all year round. Stop by to try Koselig’s signature miso caramel brownie, togarashi caramel corn, frozen pudding pops and other rotating treats.

Located just north of Riverfront Park in the Papillon Building, Kasa is a dream come true for chef-owner, Juli Norris. She wanted to create a restaurant that would fit the location, serve food that would make locals proud, and show tourists just how cool Spokane really is. Grab a few fusion-style sandwiches made with house-made Kasa flatbread for a picnic at the park, or dine in the taphouse and enjoy one of the local craft beers or wine on tap.

A two-person, everything-from-scratch, female Veteran-owned bake shop specializing in coffee cake, breads, bagels, scones, cookies, and granola has relocated to downtown Spokane. They also offer french-press coffee, loose leaf teas, house made vanilla chai and hot cocoa, and event space rental for parties of 30 in their new speakeasy basement.

Indigenous Eats

Jenny Slagle and her husband Andrew, opened Indigenous Eats, a Native American comfort food restaurant in August with a menu that centers around Indian frybread. Native values of family and respect for culture creates a connection and builds community. Jenny, an enrolled member of the Yakama Nation and descendent of the Northern Arapaho, says these values have helped her maneuver the intersection of the traditional and contemporary experiences throughout her personal and professional life.
